Recipe, Fudgy Brownies
We use this recipe, borrowed from Thomas Keller. This recipe produces an insane amount of brownies.
(3 1/2 sheet pans)
14 ½ oz. All Purpose Flour
10 ½ oz. Cocoa Powder
3 lbs. Unsalted Butter (softly melted; not clear, but pancake batter consistence)
12 Eggs
3 lbs. Sugar
1 oz. Salt
2 tsps. Vanilla Extract
1 lb. Semi-Sweet Chocolate Chips
- Sift flour and cocoa powder
- Whip eggs, sugar, salt and vanilla
- In 3 parts, alternately add flour and butter
- Fold in chocolate chips
- Lay batter out on greased ½ sheet tray
- Bake at 350
